Mexican Hot Chocolate Refrigerator Cookies

I took my grandmother’s Christmas cookie recipe for chocolate refrigerator cookies and tweaked them a little bit to transform them into Mexican hot chocolate cookies! We love the little bit of spicy kick these cookies have; they’re a great little twist on traditional chocolate refrigerator cookies!

Instructions
  1. Cream butter and both types of sugar. Add egg and vanilla and melted chocolate. Stir in sifted dry ingredients.
  2. Shape dough into square roll (about 1 inch thick) and wrap in plastic wrap. Refrigerate overnight.
  3. Unwrap and slice dough in slices about 1/4" thick. Bake flat on ungreased cookie sheet at 375°F for 8-10 min. Be careful not to over bake them!
