Italian Meatloaf

The other day I had texted Michael asking what he wanted for dinner. He asked if we had the stuff to make taco meatloaf, so I began rummaging through the cupboards to find the ingredients. I only found about half of them, but while I was searching i came up with a different type of meatloaf. “Pick up some bread crumbs on your way home, I’m winging dinner :)” I text Michael.

When he came home I had almost everything laid out to make this Italian-style meatloaf I had in mind.

I’m gonna be honest with you: I totally winged this meatloaf. And it turned out soooooooo much better than I had thought! If I were to do something different I would probably use mozzarella cheese, but we didn’t have any on hand. I used ground turkey instead of ground beef because that’s all we had, but I feel like it would be less greasy with the turkey. I would also put mini pepperoni in it just for funsies 🙂

  1. Preheat oven to 350°F. Dice onion. Combine with sausage, hamburger, basil, eggs, bread crumbs, cheese, and 1/2 of the jar of pizza sauce. Mix well.
  2. On an ungreased baking sheet, divide the mixture into two loaves. top each with the remaining pizza sauce (and parmesean cheese if desired). Bake for 45 minutes.
