Easy Lemon Bread

This easy lemon bread recipe can be adapted to make any flavor of moist cake with minimal effort, plus it makes two loaves so you can share! (Or not, just saying…)

  1. Preheat oven to 350°F.
  2. Put everything in a large bowl and mix for four minutes.
  3. Grease two loaf pans and divide the batter up between them. Bake for 30-40 minutes. Bread is done when toothpick inserted comes out clean.
Recipe Notes

You can switch up the cake mix and pudding flavors to make different flavors of cake. I've used strawberry cake mix and cheesecake pudding, chocolate cake mix and chocolate pudding, and even white cake mix with pistachio pudding! The possibilities are endless!

  1. hello love the recipe for lemon cake but was wondering if you could use can lemon filling in place of the instant lemon pudding

    1. Hmmmmmmmm, that’s a good question! Since the pudding mix is dry when you put it into the cake, maybe bake it without the pudding mix, then after it cools cut it in half lengthwise and put the lemon filling in between the two halves? I don’t see a problem with putting the lemon filling directly in the bread before baking though! Try it and let me know how it turns out!
