I took my grandmother’s Christmas cookie recipe for chocolate refrigerator cookies and tweaked them a little bit to transform them into Mexican hot chocolate cookies! We love the little bit of spicy kick these cookies have; they’re a great little twist on traditional chocolate refrigerator cookies!

1/2 cup butter
1/2 cup sugar
1/2 cup brown sugar
1 teaspoon vanilla extract
8 squares Baker’s semi-sweet chocolate melted
1 1/2 cup flour
1/2 teaspoon baking soda
3/4 teaspoon salt
1/4 teaspoon chili powder
1/4 teaspoon red (cayenne) pepper
Cream butter and both types of sugar. Add egg and vanilla and melted chocolate. Stir in sifted dry ingredients.
Shape dough into square roll (about 1 inch thick) and wrap in plastic wrap. Refrigerate overnight.
Unwrap and slice dough in slices about 1/4″ thick. Bake flat on ungreased cookie sheet at 375°F for 8-10 min. Be careful not to over bake them!
